Description
Combine your morning coffee and breakfast with these delicious Caramel Macchiato Overnight Oats! High in protein, fiber, and caffeine, it’s the perfect healthy start to your day.
Ingredients
-
1/2 cup Old-Fashioned Rolled Oats
-
1/2 cup Milk (dairy or almond)
-
1/4 cup Greek Yogurt (plain or vanilla)
-
1 shot Espresso (approx. 1 oz) or strong coffee
-
1 tablespoon Chia Seeds
-
1 teaspoon Vanilla Extract
-
1 tablespoon Caramel Sauce (plus extra for drizzle)
-
Pinch of Salt
Instructions
-
In a mason jar or container, combine the rolled oats, chia seeds, and salt. Stir to mix the dry ingredients.
-
Pour in the milk, Greek yogurt, espresso, and vanilla extract. Stir vigorously until the mixture is well combined and no clumps of chia seeds remain.
-
Add 1 tablespoon of caramel sauce. You can either stir it in completely or gently swirl it for ribbons of caramel flavor.
-
Drizzle a little extra caramel sauce down the sides of the jar for presentation if desired.
-
Seal the container with a lid and refrigerate for at least 4 hours, or preferably overnight (8 hours).
-
In the morning, give the oats a quick stir. If the mixture is too thick, add a splash of extra milk.
-
Top with an extra drizzle of caramel or a few chocolate covered coffee beans before serving. Enjoy!
Notes
- Use gluten-free oats if you have a gluten intolerance.
- For a vegan version, use plant-based milk, coconut yogurt, and date caramel.
- If you don’t have an espresso machine, 1 teaspoon of instant coffee powder dissolved in 1 tablespoon of hot water works perfectly.
