Description

Combine your morning coffee and breakfast with these delicious Caramel Macchiato Overnight Oats! High in protein, fiber, and caffeine, it’s the perfect healthy start to your day.


Ingredients

  • 1/2 cup Old-Fashioned Rolled Oats

  • 1/2 cup Milk (dairy or almond)

  • 1/4 cup Greek Yogurt (plain or vanilla)

  • 1 shot Espresso (approx. 1 oz) or strong coffee

  • 1 tablespoon Chia Seeds

  • 1 teaspoon Vanilla Extract

  • 1 tablespoon Caramel Sauce (plus extra for drizzle)

  • Pinch of Salt


Instructions

  1. In a mason jar or container, combine the rolled oats, chia seeds, and salt. Stir to mix the dry ingredients.

  2. Pour in the milk, Greek yogurt, espresso, and vanilla extract. Stir vigorously until the mixture is well combined and no clumps of chia seeds remain.

  3. Add 1 tablespoon of caramel sauce. You can either stir it in completely or gently swirl it for ribbons of caramel flavor.

  4. Drizzle a little extra caramel sauce down the sides of the jar for presentation if desired.

  5. Seal the container with a lid and refrigerate for at least 4 hours, or preferably overnight (8 hours).

  6. In the morning, give the oats a quick stir. If the mixture is too thick, add a splash of extra milk.

  7. Top with an extra drizzle of caramel or a few chocolate covered coffee beans before serving. Enjoy!

Notes

  • Use gluten-free oats if you have a gluten intolerance.
  • For a vegan version, use plant-based milk, coconut yogurt, and date caramel.
  • If you don’t have an espresso machine, 1 teaspoon of instant coffee powder dissolved in 1 tablespoon of hot water works perfectly.
